In the Naga Ao tribe, "Oya" symbolizes the cherished role of an elder sister, embodying the warmth, love, and guidance that resonate deeply within our culture. And "Umami", a Japanese term for all things savory and delicious, represents the fifth taste alongside sweet, sour, salty and bitter.

At Oya's Umami, we celebrate the rich tapestry of Naga cuisine, renowned for its adventurous flavors and vibrant use of indigenous ingredients. From the pungent allure of fermented delicacies to the tantalizing aroma of smoked meats, our dishes embody the essence of tradition intertwined with innovation. Drawing from my own upbringing and journeys across India, each recipe at Oya's Umami is infused with personal interpretation and a deep-rooted passion for culinary exploration. Through the lens of my experiences, I invite you to embark on a gastronomic adventure that transcends borders and embraces the rich diversity of flavors.

  • For a step away from Goan food, there is Ati Aier of Oya’s Umami, who does Naga food. “This is for people who want to try something different. The cuisine is earthy, we don’t have techniques that include frying or too many spice powders, instead we use fresh herbs and spices and do a lot of braising and boiling”

  • A native of Nagaland, Aier used to work in Delhi before choosing to swap the busy metro life for a more laidback style of living in Goa in 2018. “I wanted people to know more about Nagaland. And as a way of being representative of where I come from, I decided to start Oya’s Umami. ‘Oya’ means elder sister in my native language and ‘umami’ refers to the fifth basic taste.”
