I absolutely love these meat naga dry pickles. They are super delicious and go with literally everything (I’ve even had them with cucumber and hummus, was brilliant). It’s all meat and very protein rich. I personally find meat jerky too chewy but these are shredded fine to give a delightful eating experience! Thanks Oya’s Umami!

For a step away from Goan food, there is Ati Aier of Oya’s Umami, who does Naga food. “This is for people who want to try something different. The cuisine is earthy, we don’t have techniques that include frying or too many spice powders, instead we use fresh herbs and spices and do a lot of braising and boiling”

A native of Nagaland, Aier used to work in Delhi before choosing to swap the busy metro life for a more laidback style of living in Goa in 2018. “I wanted people to know more about Nagaland. And as a way of being representative of where I come from, I decided to start Oya’s Umami. ‘Oya’ means elder sister in my native language and ‘umami’ refers to the fifth basic taste.”
